Gourmand Geets : Summer Salads

My tryst with salads truly started last year with the sudden awakening that I also have to watch what I eat ( oh the awful thirties) and with a crazy work schedule like mine, it does help to eat healthy healthier.

Pushing aside the cream loaded salad recipes of my youth, I started experimenting with fruits and lighter dressings. A year later, I now have a reasonably wide repertoire of salad recipes. Enough in any case to tide me through this sultry summer – what could be better to rejuvenate an exhausted body, than a bowl of chilled, fresh salad ?

Here are two of my favourite recipes this season :

Watermelon and Feta Cheese SaladWatermelon and Feta Cheese salad

A delightfully refreshing salad prepared in 15 minutes.
In a large bowl,toss chopped watermelons, finely sliced onions (or shallots or spring onions), fresh mint leaves and feta cheese. Chill for at least 30 minutes before serving.

Vegetable SaladVegetable Salad

In a large salad bowl, toss sliced tomatoes (make sure they are nice, red and firm tomatoes if you don’t want a watery salad), cucumbers, capsicum (green, red and/or yellow depending on what’s available and what you like best) and lettuce leaves with some feta cheese (I occasionally use Gouda for that sharper flavour) and French dressing. (I really like Remia and Salad Magic). Serve immediately.

I also like to add a dash of freshly ground pepper and some croutons for some serious crunch.
